Chef Jon, what inspired this spring’s new menu?
Spring is all about lightness, colours, and renewal — and we wanted our menu to reflect that. I’ve worked closely with local farmers and foragers to bring in fresh wild garlic, alpine herbs and greens, and early-season vegetables into the dishes. The inspiration really comes from what nature offers us at this time of year.
How important is sourcing locally to you and your team?
It’s essential. Not only does it support our community, but it gives guests a true taste of the region. We’re proud to use dairy from nearby farms, herbs from the forest, and vegetables picked just a few kilometres from here. It creates an honest connection between plate and place.
